So it may be too early in the season for most of you to be making -- and eating -- cheeseballs, but a huge box of WheatThins from Costco and finding crushed pineapple in my cupboard, inspired me to make the first cheeseball of the holidays (it's almost Halloween). This is my favorite one, and now Eric loves it too. I've modified the recipe I got from mom because my favorite part is the pineapple flavor.
8 oz. cream cheese
8 oz. crushed pineapple, drained (modified: I put in 20 oz. crushed pineapple, drained -- and using Dole really does taste better)
1/4 cup chopped green pepper
1 1/2 tsp. Lawrys seasoning salt (if you use generic brand season salt it doesn't taste as good)
2 tbs. chopped onion (I use dried onions)
Soooo good.
