Monday night was the 4th year I have participated in Shannon Malcom's Christmas Cookie Exchage. She has been hosting this event for 11 years now. This year there were 10 participants. Each of us made 10 dozen cookies, packaged them in separate dozens, and then went home with 10 dozen different kinds of cookies and recipes. I signed up to bring cookies to orchestra tonight so I could share the bounty with others and get most of the cookies out of our house. I didn't share two of the kinds because they were favorites of the boys. This year I brought:
Peanut Butter Bars (or Marcy bars)
1 cup margarine
1 1/3 cups graham cracker crumbs (11 crackers)
1 cup peanut butter
2 1/3 cups powdered sugar
12 oz. chocolate chips
Melt the margarine then mix in the next three ingredients. Spread in a 9x13 pan. Melt the chocolate chips then spread over the pb mixture. Cool in the refrigerator but cut into bars before it gets firm.
These are so easy to make I almost felt like I was cheating.

I am totally going to make those cookies...they sound so yummy! Can you use butter or does it have to be margarine. I have all the ingredients except margarine...maybe I will give it a try with the butter! Were there any other yummy recipes you want to share?
