Lucky Soup recipe

aka Cream of Zucchini Soup
in the recipe binder from my mom it says "Dad's favorite soup" under the title. In the recipe book compiled by my friend it says "a daycare favorite." It is a Blaser favorite now too, maybe. The boys found out that they were really eating zucchini and Ridge had the exact reaction that I expected. A huge, "What!? I was eating zucchini?" Laine told them. I called it zucchini soup instead and then corrected myself. She still ate it even though she knew the secret. She actually seemed proud that she liked a soup made out of zucchini. So here it is. May it bring you lots of luck at the dinner table.

3 c. sliced zucchini
2 T. minced onion
1 tsp parsley flakes
1 cube chicken bouillon
1/2 c. half and half
1/2 c. water
2 T. butter
2 T. flour
1/2 tsp salt
1 c. milk
1/8 tsp pepper

Combine zucchini, water, onion, parsley, chicken bouillon, and salt. Cook until zucchini is tender and most of the water is gone. Puree.
In a saucepan melt butter; add flour, pepper and salt and stir to combine. Add milk and half and half and simmer, stirring until thickened. Stir in puree and mix well. Thin with milk if desired.
Garnish with sour cream and paprika if desired.

We love that soup and we make it regularly! And to get my kids to eat it I tell them how it's Grandpa's favorite. Well, that works on Luke--Kate won't touch it, but she just loves the store bought chicken noodle. Yuck. Ungrateful girl. :-)

Can't wait to try this! Thanks for posting it. Mike's probably not going to fall for the "Luck" portion to see past the zucchini. I'm gonna try it anyway and hope.
